Maple Glazed Pecans

     It's officially Fall, and has been for the last 12 days, but perhaps we should remind Mother Nature. I know this is South Louisiana, but the thermometer in my car yesterday afternoon read 95F!
     The local stores have been advertising Halloween decorations and candy since the end of August. By the time Halloween actually arrives, there will be a few weeks of Thanksgiving prep and on to Christmas! This has me wondering if I blinked and there went 2019!
     The Mister has been stocking up on pecan halves. They sell them in the warehouse club in two pound bags currently for about $13. The price usually starts creeping up closer to the holidays. They are a versatile ingredient to have on hand. I have already shared recipies for pralines and pecan pie.
     A couple of years ago, a sister shared a recipe for these Maple Glazed Pecans. They are terrific as a snack, or to stir into yogurt, or to sprinkle on a salad, or ice cream for that matter! They have become a favorite when friends come over and we all need something to crunch on while dinner is cooking. I believe the original recipe came from Martha Stewart. I have doubled the fresh thyme.



                          Maple Glazed Pecans

Preheat oven to 375F
1 lb pecan halves
1/4 cup maple syrup
1 tbsp brown sugar
3 tbsp melted butter
1 tsp coarse salt
1/2 tsp cayenne pepper
(Optional: 1 1/2 tsp extra spicy cajun seasoning instead of separate salt and cayenne)
2 tsp fresh thyme leaves, roughly chopped (stems removed)

In a large bowl, combine all ingredients.  Spread onto a rimmed baking sheet. Bake 12-15 minutes. Stir frequently and do not turn your back or get distracted! They can burn in a heartbeat!. Remove from the oven when you can smell them toasting and you can see that they have changed color. I turn them out onto a silicone sheet and spread them out to cool completely. If you don't have one of those sheets (I can't recommend then highly enough), you can use waxed or parchment paper.  Once cooled, store them at room temperature in a covered container.
